Old varnishes — particularly those based on natural resins and oil — have a well-documented tendency to turn amber and then brown over decades. The artwork underneath may be perfectly preserved, but it becomes impossible to see it through the discoloured varnish layer. What Causes Yellowing in Varnishes?

The yellowing problem comes down to chemistry.
